We can only think of one day or maybe two days that we would want to park hop. Can we not simply add 2 tickets and park hop twice? It would be cheaper for us that way.

It would definitely be cheaper for most people to do that, but it won't work. If you want to visit more than one park in a day you must have the parkhopper option. You can't use an extra day's admission.
I was thinking of that plan for my trip last year, but luckily I mentioned it on here and the experts told me it wouldn't work. If you attempt to go to a second park, they will direct you to guest services and you will have to upgrade to park hoppers. Your choices are to either: a)rearrange your plans for only one park a day, or 2) get the hoppers and take full advantage of them to feel you are getting your moneys worth. We went with option 2 and I was surprised at how much more relaxing it was for us. The one park/one day thing can be stressfull, because you feel like you HAVE to do everything that day. With hoppers, you can hit one park early for rides, then maybe do dinner and a show at a different park. Hope this helps!
why couldn't you split your days... for example if you are going for 10 days, buy a 7 day ticket without park hopping and then buy a 3 day park-hoppers. You'll have to use them in a row - all seven days consecutively, then the three days (or vise versa), but it's an option.
We found the first four days were definitely focused on one park per day. After that, we found it relaxing to hop when we wanted to.

We also have enjoyed doing EMH in one park, taking a break and then hitting another. As they say...different strokes for differnt folks!
We've done both! If you are in doubt I'd suggest to wait and see. If you want to add PH option it is easy to do at any guest service during the 14day period.
The one time we really enjoy it was when we stayed at BC. Short walk to Epcot World Showcase - and during F&W festival - turn the PH option a MUST have .

Because that would be a lot more expensive than just getting a 10-day park hopper; the longer your ticket is good for, the cheaper each individual day is.
7-Day ticket: $267
3-day Park Hopper: $287 Total: $554
10-day Park Hopper: $364
NET DIFFERENCE: $190

The problem I see with this is cost. After about 6 days, the price for an additional day is only $4 per person. If you simply add the parkhopper option (approx extra $50/ticket???) you'd have a much better deal than buying a new 3-day ticket w/ hopper. The parkhopper option is the same cost across the board, whether it's for 2 days or 10.
Personally, we LOVE the hopper option. Much less pressure to see/do everything at once. And we know that we can always go back to experience more at one park (say MK) if we get bored with the first park (HS for us)... I think just about every day of our touring schedule includes one park in the AM, a break in early afternoon back at hotel, then a different park in the PM.
The only way you could in reality do it is to buy paper one day tickets at whatever the current cost is - something like 85 dollars I believe for just one. It would cost you for one person an extra 170 to park hop that way (2 days you said) versus just adding the actual park hopper option at 50 per person. Adding the park hopper is way LESS expensive. And as others have mentioned, you don't have to add it right away - you can add it on an as needed basis but it will still remain 50 whether you have a full ticket or only a day or two left on it.
We tried adding days to supposedly park hop a few years back when we were not aware that it was not allowed. : I thought, "why not just add an extra day for the day we wanted to start at MK and then hop to EPCOT?" Boy I was WRONG!!! Turned into a disaster! It was the last day and everyone had hopes of visiting EPCOT again on the last day. DH was really mad (at Disney ha ha). But it was just simply we did not understand the rules. Guest services offered to add park hopping option for a ridiculous price since it was the second half of the last day... So back to MK we went and still had a fun time. But learned my lesson!!! We always get hoppers now but mostly because we stay near EPCOT and want to go in and out for transportation and dinners. As said above - Nope - unfortunately, because adding a couple of days would be much cheaper than the hopper.
We've travelled with and without the hopper option. Without is completely doable, however I prefer with the hopper. It gives us lots of flexibility to take advantage of EMH, and hop to a less busy park after the EMH are finished. And no stress of making sure we have done everything we want in a park, because we can't come back.
It's not just the "Disney won't allow it," the turnstiles themselves are coded to lock out a non-park-hopping ticket from using up another day on the ticket at a separate park.
Because that would be a lot more expensive than just getting a 10-day park hopper; the longer your ticket is good for, the cheaper each individual day is.

Yeah, I had just did the math and it was waaaaay more pricey that way. We would do better to just go ahead and get park hoppers for the whole stay.
