I think one of my best best dining experiences ever was Tokyo Dining. Had great food, and extraordinary service, beautiful location. With luck & good timing may be able to watch Illumination from your table. We ate, then watched from the balcony. That said there are many great options at Epcot, depending on your taste in food. Bistro de Paris had great food and service, but fairly formal, not sure what it will be like as Monsieur Paul. As suggested, check menus and reviews @ AllEars or other sites. It's a chance to be a little adventurous and try new tastes. Don't forget some of the kiosks for snacks, or sample sake @ Japan, wines in Italy or France, beer and wine in Germany, tequila in Mexico, etc. Take time to enjoy.
Thanks everyone for the wonderful suggestions. I am glad that I have some time to plan out the meals anyways. Other than that we are going with the flow except the few rides that I want to ride. Everything else will be a bonus!!
We always try to go to Coral Reef. You can enjoy dinner and if you go at the right time they also have divers in the aquarium. These divers are not employees, they are guest taking the Dive Quest Tour. They will swim up to the windows and interact with the crowd. It is as much fun for the diners, (especially children) as it is for the divers. I did that 2 weeks ago. We also love the entertainment at Teppen Edo. The chefs are masters of their craft. Great time for all. No matter what restaurant you choose I know you will enjoy it because you are at DISNEY WORLD!
We love the Sunshine Seasons first thing in the morning. We get our FP for Soarin' and then go have a leisurely breakfast before returning for our ride. Last year my daughter and I did Akershus and loved the food but we could have done without the princesses. This year we will be trying the Biergarten. Agree that it's now too hard to get into LeCellier and the food isn't worth the price you pay although we did enjoy the soup and pretzel sticks and maple creme brulee. Enjoyed Tutto Italia but they've dropped our favorite pasta dish so probably won't go back and we think you can get better Italian at Portobello's at Downtown Disney. So much of it is ambience and not food quality anyway - our opinion only!!
We liked Via Napoli in the Italy section. We were walk ins for lunch and it was delicious. I had the lasagna and the family had pizza. Excellent service but a little pricey. We also ate at Le Cellier for dinner. We enjoyed the food but even with ADR we waited for at least an hour.
We have eaten in Mexico a lot (4 or 5 times). It is a good place to get out of the sun. We are skipping it this June however. We have done Japan, Italy, Canada, Norway. Our favorite was Canada (Le Cellier)!! We are booked for the Chefs de France for this next trip - a first. We have never been disappointed anywhere at Epcot. You have a lot of time. Look at menus on allearsnet. AND you don't have to dress up at any of these!

Noone has said this before but we really enjoyed the Garden Grill. We also like Le Cellier but haven't been in awhile. We are going to try Via napoli next time.
Great ambience and service. The pizzas are fabulous and so are the appetizers and the entrees. It's one of the better restaurants at all WDW imho. Great cocktails
