Last time I planned on where we wanted to eat, then checked the times of each park for the days we'd be there, and then planned which park which day, and then made ADR's for those places we wanted to eat.
I tried to plan on getting to the park early (before 9:30 am) and just "going with the flow" as far as what we saw and when, checking times of shows when we got there.
We look at the calendar for EMH parks and then start planning our week out from there: Deciding which parks we want to visit on EMH day, Deciding what special meals (hoop-dee-doo, Chef Mickey's, etc) we want to do, deciding what things we want to do in the parks. We then put them all together in a spreadsheet and see if it looks sensible.
Last year I tried planning out what rides to do on each day, but it didn't work out at all. We just went to thepark we had planned, and went with the flow, depending on which rides and attractions had the shortest lines. This year we'll be doing the same thing!
i first start out by making a list of things that can't be missed, then a list of stuff that would be nice to do but not essential.
then a rough plan of which park which day, but we usually park hop and also return to our room midday for swim and relaxation.
once we get there our plans usually change, so we all know the plan we arrive with is not carved in stone.
most important thing is to not plan every single detail and every single minute, cause things change as you are there. don't sweat the small stuff. but have a blast planning, that is half the fun.

Our last trip I planned like 400 days in advance - I swear the planning was a blast (almost as good as the visit). I looked at the EMH schedule from previous years and tried to figure out which park or parks if we are hopping for that day. We didn't always go to the EMH park. I used Official Guide to Disney and Passporter to help me determine which park on which day as well as other websites. The Official Guide has a chart on busiest days. Sometimes we used the EMH like at nighttime. Then I planned eating. I changed some of the days according to where we were eating. I loved planning you will too.

I make myself a spreadsheet for WDW planning with the following fields for each day; morning activity, dinner location and nighttime activity.
Mornings are usually always parks (non EMH) or tour and then since we always take a break in the afternoon so dinner can be anywhere.
I have a list of restaurants that we always have to go to either for a dinner or lunch so I fit those in and then I come up with a list of restaurants that we haven't been to before and fit in as many as possible.
I'm a WDW addict but I'm not a commando so our schedule is always subject to change on the fly and since we go to WDW in the off season it always works out.
I have never been to Disney and am going soon with my daughter 15 and son 11...I planned out what parks we will be in on what days and then chose a place to eat at each of those places for dinner that day. I was not planning on doing alot of park hopping if I can help it. I did plan on some resort eating though and of course Hoop Dee Doo too.
I haven't planned out what we will do in the park that we will be at for the day though...have that to do yet. I was just going to make a list of what rides and shows everyone wants to see and do and plan from there. One funny thing is...both my 15 year and and me...well we can't wait to see Bear in the Big Blue house...lol!!!!
