I contacted DCL because I was curious what the prearranged sailings for Sign Language Interpretation were as that is my major and would find it neat to watch them interpret the shows on DCL.
A little information:
If your sailing on a date that isn't on this list, fill out the Medical Form and DCL has told me they will try and accommodate you but can't guarantee they can find an interpreter for your date. They do offer closed captioning, print outs of the shows scrips for the main theater, and have kits for the room to help with making the room accessible to those who are Deaf, and/or Hard of Hearing.

This came directly from Disney via their website and the Contact Form. I found them to respond very quickly and were extremely helpful.
You also never know who else on the crew is fluent in ASL. My sister used to be an officer (IT) on Carnival and is fluent...though not an interpreter. She was often called to come and interpret for guests when interacting with various crew members.
