I'd skip any restaurant but Animator's Palate on a "show" night, as the show(s) are a one-time opportunity. The other two restaurants (regardless of ship) can be experienced at breakfast and/or lunch, so there's no reason for you to miss that restaurant's decor. Other than that, you might make your decision on which menu is being served (each night offers a different menu) or the evening's theme (Pirate, Captain's Gala, etc.). While there's no regular dining room menu I wouldn't skip in favor of Palo or Remy, you may feel differently.

I agree with Dave that the thing you don't want to miss is Animator's Palate on Show night. On a seven day cruise you get each restaruant twice so just plan accordingly based on the other events going on.
On a 7 day itinerary, I like to skip Pirate Night as it's my least favorite menu. In addition, I know I won't me missing any special menus or shows in the dining rooms. On a shorter itinerary, I agree with what the others have posted; don't miss AP. The choice of the other two is hard, though, because you have a unique garden setting or a very formal dining room you might not experience. However, given that Palo and Remy are formal, I'd probably give up Riyal Court/Palace.
We have already booked Palo for night 3 of our 7 night on the Magic....we did that so we didnt miss formal night and pirate night...hoping we dont miss AP though....
I loathe the pirates menu so i'm in agreement on that but I know a lot of people with kids want to be in the dining room that night. My step-son has no problem ditching us for the kids club at any time so it hasn't been an issue for us but i know it is for some families.
Animator's "show night" is the night I wouldn't miss, especially on the Dream and Fantasy; it's less remarkable on the Magic and Wonder.
Great advice from you all - thank you. I'll ensure our munchkin gets to see Crush and we'll lunch in the restaurant that we'd miss for an adult only evening.

I agree with Michelle...skip Pirate Night Dinner...
We just got back from 7 night Fantasy cruise. We had Animator's Palate on 3 nights and would not give one of those up. We loved the restaurant - so entertaining.
Of the others, I would skip Enchanted Garden. Our dinners there weren't great. Though they have a really good lunch buffet - we had that twice.
As far as skipping a dining room, that would have to be Enchanted Garden for me. It's a lovely dining room...don't get me wrong. Just the least favorite of the three in my opinion. As for menu, my least favorite is the Prince and Princess menu (served on formal night). Tough to miss out on the dining room on formal night, but I would just because I really dislike that menu.
