I didn't mind the "Happy Birthdays" or the hollering until the night I needed to call the lobby at 11pm and ask when it was going to stop.

I think the issue is that it was poorly designed. Guests of the restaurant may enjoy the antics, but guests of the hotel probably don't.
I also read in the comments on WDWNT that a person that had just arrived with a group of adults didn't really appreciate all of the antics especially when they had to bring ketchup to another table of adults. I can see it being fun if you have kids with you but when it's adults doing stuff like that it can be a little bit annoying. Especially as from the report the only comment they got was "took you long enough."

If that was the reason why it seems like it could be an easy fix by closing the restaurant in some with a wall or barrier. Its probably more from people that don't like the antics. That could be easy to fix too by telling the wait staff you don't want to participate. No reason to ruin it for all.

We just changed our ADR from WCC to Trails End for July. We like the food OK at WCC but definitely choose to go for the fun antics. Without the antics, we may as well try Trails End.

Sad change
