Think of the food as familiar but with somewhat exotic seasonings. You will recognize most of the foods, like soups (fantastic!), salads, salmon crusted with nuts, roasted meats, etc. They have things like potatoes with "Afritude" which refers to the slightly spicy seasonings on them. Dishes like bobtie (a layered casserole dish) and vegetable couscous may not be totally familiar, but if you try a bite, I bet you'll love them. If you have a kabob place near where you live, many of the flavors will be similar.
Desserts include the very popular zebra domes (mousse on a cake base with a striped shell overall--and a slightly rummy flavor), cookies, brownies, fresh fruit and more. We really loved Boma's food selections, even our son, who at 24, with autism, found his favorites too: mac and cheese and chicken nuggets. And when you've finished eating, waddle on out to the lobby (you'll be stuffed!) and view the art, then take a look at the animals on the savannah: they even have night viewing binoculars so you'll be able to see them after dinner.
One thing to keep in mind is that, while things are somewhat "exotic" to your usual burger and fries tastes... it is nowhere near the true authentic experience you'd find at a true African restaurant.
What I like about it? While it is a buffet, I almost feel like I'm eating "healthy", as everything seems to be lighter than a typical buffet. It is also neat to do something a little different for a dinner as well. Food has always been good as well.
The true gem is that you get a good excuse to visit the AK resort. We always make time to look around the various savannah views, as it is just a neat place to poke around. That alone helps add to the value, as I would not normally plan on going that out of the way to visit.
As others have said, the food has an exotic taste to it - I think what I'd say is that it isn't overly spicy. That worried me the first time I ate there, as I'm not good with spicy food, but Boma food isn't that hot to eat.
I think the flavors at Boma are just a little different without being at all weird. Very little if anything is spicy hot. Many things have a light hint of spices that American tastes associate with sweet desserts, but are used in savory dishes to good effect. Take small samples to start with, and go back for things you like. There are usually roast meats that are very basic but have optional sauces to go with them. Even picky eaters in my family found plenty to like here!

Boma is one of the restaurant's that I have a hard time convincing people to try but never have to convince them to go back! It always winds up being a favorite for most of my clients.
It has something for everyone - roast for meat & potatoes people, lighter options for vegetarians or lighter eaters, a childrens buffet for kids or the less adventurous among us but most importantly... the dessert buffet with the amazing Zebra Domes!
I'm sorry to say that our one dinner meal at Boma was not enjoyable. The food was good but the atmosphere was less than relaxing. It was loud and we had people constantly walking around our table to get to the buffett, making it less than comfortable. And to top it off, our waitress basically went awol after greeting us. We never could get refills on our drinks. We haven't felt the need to go back.
We did Jiko on the same trip and it was so much nicer eating there....
Thanks everybody! That does sound good about the food. I was a bit worried about the food being too spicy for me as my stomach doesn't handle spicy food well - but judging by what you all are saying, I should be just fine.
Hhmm, coconut chicken curry soup sounds pretty good - I'll have to try it. I'm glad it's a buffet-style restaurant. I'll just try a little bit of whatever looks good

Don't worry about Spicy Sabine! Boma uses spices rather than say hot peppers to add flavor to the food! My stomach can't handle too much spicy food anymore, but I love Boma. The salad and soup bars are excellent--and change regularly, but there are always at least 4 soups on offer and about 10 salad options in addition to a small regular salad bar. There is always a fish option on the entree bar and usually two meat options as well. There are plenty of sides and a kids bar too!
Boma is our family's favorite TS at WDW! We always find so many delicious selections. As others have said, the food isn't overly exotic... most of the dishes will be familiar, with a twist! I like the soups and salads best, and often have trouble leaving room for dessert. (But somehow I can always manage a zebra dome or two!)

Thank goodness we weren't the only ones that felt this way. It was a huge huge disappointment for us. We won't go back either. If I am spending that type of money, I want it quieter and we have kids....they found it tooo loud.
