We absolutely love this resort. The theming is great, we love the food court and we the pool! We have stayed thee two times and would not hesitate to stay there again!
We stayed there in 2002 for a family reunion and it was horrible!
It was my parents first visit to WDW and they hated it. They had to change rooms twice. The first time the carpet was soaked, they literally sunk into it when they walked into the room. The second room smelled so bad no one could stand it. I really didn’t care for it at all. It reminded me more of the value resorts, but just more expensive. For me it just didn’t have that Disney magic feel. I also heard it not really a “Disney” hotel it’s like the Swan & Dolphin. (Me bad! Apparently, it is a real Disney hotel) The restaurants were overcrowded due to a convention. I guess it's more of a business/convention resort.
We have stayed at pretty much all the resorts and our favorite is Port Orleans Riverside. We also like the Polynesian and Grand Floridian.
Of course this is just one opinion, you really have to experience things for yourself. I wish you a great Disney experience wherever you stay!
You will get mixed reviews no matter where you are going to stay. We stayed there a couple years ago and at the time I wasn't really happy with it. Don't get me wrong, it was clean and beautiful and everyone was very nice, but after staying at POR twice, it just wasn't the same to me. I felt very spread out and I didn't care for the set up of the food court. That said, I would suggest trying it. The pool is awesome and the rooms are very nice. My parents were with us (in a different room) and they loved everything about CS.
I enjoyed staying there in 1998, but I wouldn't particularly come out and say it's good for kids. The Dig Site theme pool is nice, but there's a giant lake in the middle of the resort which requires a good bit of walking around to get from the front desk/food court to the theme pool clear on the other side of the lake. The food court has a heavy emphasis on Mexican and Southwestern cuisine. As it is a convention hotel, there are alot of business travelers there. When we were there in 1998 (July Fourth week), there was a Shriners convention, so the resort was overflowing with adults.
I'll be at he Coronado for the 4th time in September. My sister and I love this resort. We took our parents down there for their first WDW trip last year and they also loved it. They keep saying when they go back down, that is the only place they will stay. I feel the food court has a good variety of food with many different stations. I don't have children, but my cousin did stay there with her 3 kids and they all loved the Dig Site.
Rooms are bigger than value resorts... Grounds are FAR nicer than value resorts... The pool is awesome... Nice children's play area... Nice giant hot tub/jacuzzi for grown ups...
The only caveat I have is that the campus of Coronado is spread out...you should consult a property map and try to request a specific building based on your needs... You'll like either be closer to El Centro (the main building where the food court is and the lobby bar and gift shop and such)... or closer to the Main Pool...
We picked a location (I think building 4) that was near El Centro, a quiet pool and a bus stop... It was a longer walk to the main pool... but if we were taking time to go for a swim--we had time to walk to it... we didn't always have time to grab a quick bite or catch the bus and all... (of course there are bus stops throughout...you can always catch a bus to go around the property and get of at a stop closer to the Main Pool.)
We've stayed at CSR three times now...I like it best of the moderate resorts... But I've also stayed and liked PO Riverside and French Quarter...
CSR is located in the Animal Kingdom resort area.
The Pepper Market food court is unique in that you are seated by a host...s/he takes yoru dirnk order and gives you a little slip...then you get up and can get food from a variety of food stations... what is also unique is that the food is made fresh to order... so it takes a little longer...but the food quality is excellent... The variety there is astounding... If you are on the meal plan... you can get a HIGH DEGREE of value eating several of your counter service meals here... It is not difficult to get $30 worth of value for dinner if you get the NY Sirloin--grilled while you wait... Delicious! And you can pack it up and take it back to your room if you wish...

I have to disagree about the food court...they had also Chinese Food...and a grill for burgers and steaks, a fish of the day entree, a pasta station, and plenty of offerings for children... It did have Mexican offerings as well...but I can't say it was heavy on that stuff...
It's true that there is a convention center here..so you will see more people dressed LESS casual here... My kids (1, 3 and 5 last trip) loved it here...
