Can the child swap work for a family with two children and two adults in this way:
DH cannot ride some rides due to motion sensitivities. Can I ride with one child while the other child waits with DH and then ride with the waitning child?
Yes, that's exactly how it works. Disney doesn't care whether it's a child who can't/prefers not to ride, or an adult who can't/prefers not to ride - either way, you can do the swap.
In your circumstances, this may only be an issue on certain rides - there are many attractions where one parent and two children can be seated together, making the swap unnecessary.
Disney, by the way, currently calls this "rider swap" - I guess it falls into the realm of age/gender neutrality.
