I've read quite a bit that's really helped ease my worries about getting on rides..
However, I'm still a bit concerned about one thing...
I've read that if you're a larger adult with a smaller child, then not to sit in the rides with the lap bars that come down.
My husband and I are larger..our 5 year old is an average 5 year old, without making him ride every ride with his brother, whats the best option?
Also, how do I know what rides this will be an issue on before getting up to the ride??

I'm a Pooh-sized person and my son is a thin kid -- with the lap bars, I just tend to wrap an arm across him to hold him down a bit. It's not really been an issue.
For the "newer" rides, the lap bars are individual. On Everest, for example, you each have your own lap bar, even though you're sitting side-by-side.

Goofy's Barnstormer (MK)
All other (rough) rides I can think of have either individual lap bars or seat belts. There are other lap bar rides, but they are Fantasyland-type rides.
Both myself and my DH are "pooh" sized and our son is very skinny and we have had no trouble on any of the rides. We put him in between us and he is fine. However, we do not take him on the more aggressive rides like space mountain, etc. So I can not give you advice on those, your child will have to meet height requirements to go on those anyway. You might look at the rides on YouTube, they might show the lap bars, etc. Others, may have more advice. Hope this helps.

On Space Mtn, you have your own seat, single row. so no worries there.
Usually, the rides that still share are "tamer" (though BTMR gives me some moments), so we are able to support the kids a bit ourselves. There are only a handful that actually share that you would even need to worry about.
Space Mountain has a long row of single seats (one behind each other), each with their own y-shaped lap bar. Once you're in the seat with the bar down, you're really "in" there... As long as a child meets the height requirements, the seat will keep them secure.
