We're considering purchasing 10 day park hoppers from Undercover Tourist. If we purchase these, then decide at some point during our vacation that we want to upgrade to Annual Passes, can we do that with tickets that we bought from Undercover Tourist? If so, does the full value of the pass we bought get applied toward the AP, or do we lose some money in the upgrade?
Also, can we do it at any point during our trip or does it have to be within a certain number of days of using the hoppers? And, when would our AP expire - one year from the day we activated our hoppers or one year from the day we upgrade to AP's?
I beleive the rule of thumb is that the passes, expiring or non-expiring, need to be converted within 14 days of first use. You will get at least the price you paid for the passes through undercover tourist. If you have used them, it is possible that you will get the full, current non discounted gate price for the tickets. The castmember just needs to bridge the cost when you upgrade. If you upgrade, the AP will be good through the day of first use of the hopper pass.

Yes - the tickets purchased from Undercovertourist.com are Magic Your Way tickets and are fully upgradable. (Though, like all MYW tickets, any changes have to be made within 14-days from the first time they go through a turnstile.)

If the tickets are unused (and haven't gone through a turnstile) at the time you upgrade, you are given the price you paid for them. You don't "lose money," but you only get the amount UCT charged you for them.
One work around that sometimes bypasses that is to go through a turnstile with the ticket and THEN go to Guest Services to do the upgrade. I've had that work for me in making the tickets the Disney value, rather than the UCT value. (No guarantees on that working though.)

The "within 14-days of first use" rule applies to any and all tickets -- including base tickets, hoppers, and non-expiry tickets.
In my experience -- but I wasn't paying close attention -- the AP date starts on the date you purchase the AP, not the date the original MYW ticket was used. But you might want to contact the CMs at Disney Ticketing for confirmation on that one. Call 1-407-566-4985 and choose Option #2. (From 8:30am - 4:45pm EST.)
Your AP will start the date you used your tickets, not when the AP is purchased. For example, if you run your tickets through the turnstile on 5/1 but don't buy your AP until 5/10, your AP date starts on 5/1.
Technically, you'll need to upgrade within 14 days, but I have personally done it past that date and they've allowed it. I don't know if I would trust that, as some CMs will let the rules slide while others won't. In my case, the CM allowed it because it was "within the same month." Again, better safe than sorry and upgrade within 14 days if you can.
