8 day park schedule - need help with "rest" day!

Ok, so we look like this: (our girls will be 4 and almost 7; also have my parents in tow)
Arrive Friday Feb.1st around noon, I figure 2pm before we get to the hotel and then likely wait around to get into our room. then hopefully a family nap followed by possibly night entertainment at MK.
Feb 2nd - AK, Tusker house lunch
Feb. 3rd - Akershus breakfast, tour Epcot (mostly Future world I'm thinking), WCC supper
Feb. 4th - MK, high concentration in new fantasyland; CRT for 4:20pm dinner (considering canceling to get two alternate dinners)
Feb. 5th - "rest" day, Ohana 5:15pm dinner, not character
Feb. 6th - HS, Disney Jr. breakfast
Feb. 7th - AK; 5:45pm 1900 PF
Feb. 8th - MK noon hour Pirate's league for 6; Pirates 'n Pals fireworks cruise that night
Feb. 9th - Epcot; Chef Mickey's dinner
what to do on "rest" day, since we can't help ourselves and stay completely away from parks for a whole day! no park hopper. open to changing park days that aren't tied to in-park reservations. We will certainly pace ourselves and spend some afternoons back at the hotel for a nap and swim, weather permitting. worked very well last time.
downtown Disney, AND.........I like to go visit other resorts! I love to see the lobbies, pools, shops, and if you wander up during the day and a room in UNoccupied, sometimes the maids let you in to look around. We always plan a day to visit other resorts.

keep the ideas coming : ) thanks! I would move WCC, but can't do the 8th because we need to be at Contemporary no later than 6:15pm for the Pirates and Pals fireworks. Will definitely hit Downtown Disney at least once if not twice. Enjoyed doing that last trip after we needed to leave AK early afternoon for Kayla to have a nap and then it was too late to get back to the park with 5pm closing. Earl of Sandwich was amazing! DD definitely a possibility for first night there, since it will be a long day after getting up no later than 4:30am for our flight and MK fireworks might be too much even for us. We're staying at POR, so we can take the boat to downtown, I gather.
If you cancel CRT it would make sense to book WCC that night. I would think eating at 5:00 would give you enough time to eat and make it back. I forgot that the fireworks, etc. are earlier this time of year. We're doing the Pirates and Pals cruise next June, and we don't have to check in until 8:30. I'd suggest adding an Epcot dinner since you'll have another credit to use. You will love POR. We love it. It's where we're staying too.

Where are you staying? Oh ok POR our first resort....
Rest day ? Swimming if a very warm day....
Visit other resorts for fun, shopping, and pressed penny hunt...
Carriage ride?
Bike ride?
Catch release fishing?
DTD by boat?
Playground?
Poly beach for fireworks?
Air balloon ride at DTD?
Splitsville at DTD open now...
Movies at DTD?
Go to AKV to see animals on Savanaa....
That's the great thing about it... The problem is deciding, not lack of options lol!!

Sleep late, surrey bike ride at Boardwalk maybe even time to play in the arcade, try the "Kitchen Sink" at Beaches & Cream over at Beach Club hotel, swim at POR, short nap maybe then head off for dinner ADR. Have fun!
If you decide to do the fishing, check the times. They are only open very short hours and may not be open at all in February. It is a lot of fun for the little ones! Resort hopping can be fun, but I don't find it very 'restful'!
We don't usually have a whole "rest" day, the way we tour is we do not set the alarm and we all sleep until we naturally get up, then we are ready to tour the parks without starting out tired and feeling like we need a break. We do have a couple of 1/2 days that we spend at the pool and going DTD.
yeah, I can't see us forfeiting a park day altogether in favour of other activities - especially ones that cost more money when we already have park tickets included in our package. I guess by "rest", I'm thinking of ideas for how to do a half day or so at one of the parks at a leisurely pace. The girls might be anxious to get back to MK after just being there the day before, so maybe we'd go for part of the day, head back to POR for the afternoon, and then after Ohana maybe back to MK or watch fireworks from Poly.
Our time zone is one hour ahead of EST, so we found the girls woke up by around 7am most days on our last trip because that's 8am on their bodies. I don't think they slept past 7:30am, maybe 8am one day after a late night. We hadn't planned to rush off every mornings to the parks, but a few days into it we realized we'd be up anyway and might as well take advantage of the lighter morning crowds. We also went back to our hotel for a nap and swim about half of our days last time and I see that happening again. I look forward to it!
We usually do our rest day one day past the mid point. We sleep late, go to the pool, shower and head to DTD for shopping and an early supper. Back to bed earlier than usual and up at the crack of dawn the next day. When the gilrls were younger we took two days off and did dinner somewhere like Chef Mickey's or O'Hana one of the nights.
